Spicy Vegan Cajun Rice

Ingredients

  • 2 cups frozen pepper-and-onion blend
  • 1 Tbs. olive oil
  • ¾ cup rice
  • 1 ½ tsp. Cajun seasoning
  • 1 cup cooked black-eyed peas

Preparation

1. Pulse frozen pepper-and-onion blend in food processor until chopped. 2. Heat oil in medium saucepan over medium heat. Add chopped frozen vegetables, and sauté 5 minutes, or until most of liquid has evaporated. Stir in rice and Cajun seasoning. Pour in 2 cups water, cover, and reduce heat to medium-low. Cover, and simmer for 12 minutes, or until all of liquid has been absorbed. Stir in black-eyed peas, and season with salt and pepper, if desired. Let stand, covered, 5 minutes before serving. Of all the foods that many teens miss when invisalign is in place, high among them tends to be popcorn, pasta and (of course) many types of candy. Additionally, many think that orthodontia suddenly means the end of anything flavorful. Don't let them throw too big of a pity party on that account, however. After all, there are many tasty and healthy snacks and meals for even the most picky of palettes. For those of us with kids who seem to grimace after a mere hint of flavor, smoothies are often a hit. No chewing is needed and the cold temperature offers a bit of respite from the pain. You may want to stock up with your teen's favorite smoothie ingredients ahead of time. Things like bananas and juice are pretty standard. On the other hand, if you're fortunate enough to have a more adventurous palette to feed, try this tasty, flavorful spicy vegan Cajun rice.
